We bake our bagels right there in our little shop; every morning you can get a fresh bagel that is baked in accordance with the decades-old traditions of NY artisan bakeries. No shortcuts! Our bagels are hand-shaped after a long and unforced proofing and retarding process.
Some facts about us:
- The Bagel Shop was opened in April 2015. We are the trailblazers of bagel making in Latvia.
- The name Big Bad Bagels originated from the inspiration of the fairy tale of Little Red Riding Hood and the wolf. Because bagels taste good to both Little Red Riding Hoods and those who are hungry like wolves.
- We boil and bake the bagels on-site in the café using carefully prepared and long-fermented dough. Every morning in our small bagel shop, you can enjoy freshly baked bagels with a variety of fillings.
- Bagel baking is a lengthy and patience-demanding process - it takes about 24 hours from dough preparation to the finished bagel. Authentic bagels are boiled before baking, and that's exactly how we prepare them too.
